Have you ever tried the green tomato lecho? This appetizer is distinguished by its unusual sweet and sour taste. And the slices of green tomatoes, even after heat treatment, remain dense and crispy, which adds originality to this salad.

Wash all vegetables well under cold water. Peel and grate the carrots.

Cut the green tomatoes into slices, do not forget to cut the stalks out of them.

Peel the onions and cut them into thin half rings.

Bell pepper, peel off partitions and seeds, cut the pulp into thin strips.

Pour some sunflower oil into a saucepan, heat it over medium heat. Place prepared vegetables and spicy tomato paste in a saucepan. Mix all ingredients well, reduce heat and cook for 1.5 hours, stirring occasionally. Salt the lecho to taste.
