Lecho for the winter classic recipe

The classic lecho recipe provides for only two ingredients in preparation - bell peppers and tomatoes. You can add herbs, spices and other vegetables, but this will no longer be a classic. The recipe is simple, and the classic lecho cannot be spoiled, unless oversalted. Vinegar is added to such lecho only for storage reliability.

Wash the tomatoes well and cut into pieces. Grind them in a blender bowl or twist them in a meat grinder with a fine wire rack. Pour the resulting tomato puree into a saucepan for making jam. Put the saucepan on low heat. Add the amount of sugar and salt specified in the recipe to the puree, stir and bring to a boil.

Pour the required amount of vegetable oil into the boiled tomato puree.

Peel sweet peppers (use fleshy ones to taste better) from seeds and remove stalks. Then cut the peppers into pieces of any shape and size.

Transfer the chopped peppers to the boiling tomato puree and stir. Simmer lecho over low heat and under a closed lid for 30 minutes, stirring occasionally. At the end of cooking, add vinegar to the lecho and turn off the heat.

While the lecho is stewing, sterilize the jars and lids by any method. Put the prepared lecho in jars and roll up immediately. Turn the jars onto the lids and cool under a warm blanket. Then transfer the lecho to the storage area for the blanks.
