Lecho with cauliflower for the winter

Cauliflower has a rather specific taste, but it manifests itself perfectly in lecho rolled up for the winter with tomatoes, bell peppers and garlic. For greater safety, vinegar is added to the seaming.

Disassemble the cauliflower into inflorescences, wash. Cooking cabbage separately is not worth it, only if you are confused by the obvious cabbage taste. Then you can boil the cauliflower for 10 minutes, drain the water and cool the vegetable. Wash the tomatoes, peel them, chop finely. Cut a box of seeds from the pepper and cut the pepper itself into large pieces.

Fold the cauliflower, bell peppers, tomatoes into a heavy-bottomed saucepan, pour in the vegetable oil, add salt and stir. Simmer for about half an hour over medium heat. If the cauliflower has been pre-boiled, it is better to reduce the cooking time to 20 minutes, otherwise the cabbage will turn into puree. In 5 min. before cooking, add finely grated garlic, vinegar, add paprika. Stir lecho.

Pre-rinse the jars in soda along with the lids, then rinse and sterilize in the usual way. Immerse the lids in boiling water and hold in it for 2-3 minutes, let dry.

Arrange the finished lecho with cauliflower in jars, roll up. Cool under a warm towel, turning the seams upside down ahead of time. After cooling, transfer the workpieces to a cool place for winter storage.
