Lecho with beans for the winter

Beans are in perfect harmony with vegetables. You can serve such a preparation as an independent snack for a snack, supplement it with any side dishes, or use it as a dressing in soups.

Beans must be washed in advance and soaked in cool water for 6 hours or overnight. Boil it until half cooked (15-20 minutes) and strain with a colander.

Wash the vegetables. Chop the tomatoes in mashed potatoes. Peel the pepper by cutting out the stalk and removing the seeds, and cut into strips. Peel the onion, rinse and chop into small cubes. Peel the garlic off.

Preheat a large saucepan and add oil to it, heat it up. Transfer the onion to a container and fry, stirring regularly, for 7 minutes until transparent over low heat.

Put tomato puree and pepper in a saucepan, stir and after boiling the mass, cook for 5 minutes, stirring occasionally.

Put the beans in a saucepan, pour salt and sugar into it and stir. After the workpiece boils, reduce the heat to minimum and cook, stirring constantly, for 60 minutes.

10 minutes before the end of cooking, add chopped garlic, lemon to the brew, stir well and continue cooking at the appointed time.

Transfer the hot lecho to the jars to the top and seal. Banks must be dry and sterile. Cover the jars with a warm blanket and leave to cool slowly in the room (at least 6 hours).
