A simple option for making tortillas in a pan. Knead the dough on kefir, and make the filling based on Adyghe cheese. By itself, this cheese is salty, so we don’t add salt to the filling. We use dill, parsley and nettle as the “green component”. Such a set of herbs will not only give a fresh flavor to the cakes, but also provide vitamins.

Before kneading the dough, rinse the greens thoroughly and leave them to dry on a towel so that excess moisture does not get into the filling.

To prepare the dough, put kefir, salt and odorless vegetable oil in a bowl. Mix everything thoroughly together until smooth.

Then sift the flour directly into the bowl with the kefir mixture and knead the dough. First, mix the flour with a spoon, then start working with your hands. The dough turns out to be soft, pliable, but keeping its shape and not spreading.

We spread the dough on a work surface sprinkled with flour, cover with a towel and let it lie down for a while while we prepare the filling.

To prepare the filling, rub the Adyghe cheese on a coarse grater and pour the resulting shavings into a bowl. Finely chop the dried herbs with a knife and spread to the grated cheese. We grind everything together - the filling is ready.

Divide the dough into eight equal parts - you get eight cakes. Roll each part of the dough into a ball and then roll it out with a rolling pin into a thin round cake. Put the prepared filling in the center of each cake. Approximately one and a half to two tablespoons.

Firmly connect the free edges of the cakes over the filling in the form of a bag.

Then we turn the bags over with a pinch down and gently press the workpiece with our hands, after which we roll it out again with a rolling pin to a thickness of two or three millimeters.

Pour a small amount of vegetable oil into a frying pan and heat it on the stove until hot. Put the cakes alternately in a frying pan and fry them on both sides until golden brown.

The tortillas are fried pretty quickly - literally a couple of minutes on each side. It is important to follow the process and turn it over in time so that the products do not burn.
