A savory flatbread recipe for cheese lovers. The products are light and crispy around the edges. When kneading the dough, we pay special attention to whipping the whites of the eggs - this will provide an airy texture and splendor of the cakes. When baking, it is important to get the products on time: their surface should become light golden, in no case dark. Such cakes are perfect for borscht, broths and any other liquid dishes.

To prepare the dough, rub hard cheese on a coarse grater into a wide bowl. Add salt to taste and a mixture of ground peppers for flavor. You can also put any aromatic herbs: thyme, rosemary, dill - according to personal preference.

Sift wheat flour on top of the cheese shavings with spices.

We mix dry ingredients with our hands so that everything is well distributed among ourselves.

We break the eggs one by one and separate the whites from the yolks.

Place the whites in a volumetric beating container. We start working as a mixer at low speed and gradually increase the speed. We achieve a dense, stable foam, which we leave peaks behind the whisk.

Pour the yolk mass into the resulting protein foam, mix gently.

Then pour the cheese shavings with flour into the yolk-protein mixture in portions. Mix everything together in a circular motion.

Preheat the oven to a temperature of 220 degrees. Grease the baking sheet with vegetable oil or cover with oiled parchment. Using a tablespoon, spread portions of dough with cheese on a baking sheet, forming small cakes. We put them at a distance from each other, since when baking, the products spread and increase in size.

We set a baking sheet with tortillas on the middle level of an already hot oven and bake them for twelve to fifteen minutes. The surface will brown beautifully, and the cakes will begin to emit an appetizing cheese-rich aroma.
