There is nothing tastier than homemade cakes made with love. Lemon peel is often used in desserts, thanks to which they acquire a pleasant citrus taste and beautiful color. This recipe will create tender and flavorful lemon muffins that will melt in your mouth.

First, prepare the lemon, wash it thoroughly and pour boiling water over it for a few minutes, this will get rid of the chemicals with which the lemon was processed and reveal the essential oils contained in the zest. Grate the zest on a fine grater without touching the white layer. Then cut the lemon in half and squeeze the juice out.

In a bowl, beat the butter with a mixer until white. Add sugar and continue whisking for another 2-3 minutes. Then beat in one egg, beat the dough after each until smooth.

Add lemon zest and lemon juice, beat the dough with a mixer. Sift flour, mix it with baking soda, add it to the dough and stir it with a spatula until smooth. You should have a thick and fluffy dough.
