Lemon muffins with kefir

I love citrus fruits very much, I especially like the combination of biscuit or shortcrust pastry with lemon. Today I propose to cook lemon muffins with kefir. The baked goods are airy and aromatic. I especially love lemon muffins paired with morning black coffee.

Ingredients

Cooking process

step 1 out of 16
Pour semolina into a deep container.
step 2 out of 16
Then fill in the required amount of kefir.
step 3 out of 16
Stir well and leave for about 20-30 minutes for the semolina to swell.
step 4 out of 16
Wash the lemon well under cold running water, and then pour over with boiling water. Cut into medium-sized pieces, peel. Place in a blender bowl.
step 5 out of 16
Grind until smooth.
step 6 out of 16
Pour the required amount of granulated sugar and vanilla sugar into a deep bowl. Add chicken eggs.
step 7 out of 16
Using a mixer, beat thoroughly until smooth and fluffy. You can also use a whisk or hand blender.
step 8 out of 16
Semolina by this time will swell well and increase in volume.
step 9 out of 16
Measure out the required amount of flour and sift it through a fine sieve into a separate container. Add baking powder, salt and mix thoroughly. Add dry ingredients to the swollen semolina. Mix thoroughly with a mixer, blender or whisk until smooth.
step 10 out of 16
Add chopped lemon.
step 11 out of 16
Mix well with a silicone spatula.
step 12 out of 16
Add the beaten eggs last.
step 13 out of 16
Mix thoroughly.
step 14 out of 16
Fill the silicone molds with the prepared dough to 2/3 of the height. Place the molds in a preheated oven to 180 degrees. Bake muffins for about 20-25 minutes. Check the readiness of the baking with a wooden skewer. It must be completely dry.
step 15 out of 16
After the time has passed, carefully remove the muffin tray so as not to burn yourself. Cool the lemon muffins on kefir a little, and then remove from the silicone molds. Place on a serving dish and sprinkle with powdered sugar. Garnish with a fresh mint sprig if desired.
step 16 out of 16
Serve ready-made muffins with freshly brewed tea or aromatic coffee.

Bon Appetit!
