First of all, carefully sort out the chanterelles, clean them of debris and rinse them in cold running water. Put the chanterelles in a deep saucepan and fill with cold water so that the chanterelles are slightly covered with water.

Place a saucepan with chanterelles on medium heat and bring to a boil, then reduce heat and cook mushrooms for 20-25 minutes, periodically skimming off the resulting foam. Pour the boiled chanterelles through a sieve or colander and leave for a while to let the excess liquid glass.

Prepare tomato sauce. Put the tomato sauce in a saucepan with a thick bottom, pour the required amount of drinking water. Mix thoroughly, add salt, granulated sugar and black pepper. Put on fire and bring to a boil. Boil the filling for another 5-7 minutes, then pour in the vinegar, mix well and immediately remove from heat.

In the meantime, while the pot is brewing, prepare the jars, wash and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or boil in a saucepan for about 7-10 minutes. Spread the cooked chanterelles evenly over sterile jars.

Gently pour the hot tomato filling into the jars with chanterelles, and then screw tightly with sterile lids.

Turn the jars of chanterelles in tomato sauce upside down, wrap them in a warm blanket or a terry towel and leave in this position until they cool completely for about a day. Then turn the cooled cans with chanterelles over and transfer to a cool, dark place for storage.
