Continuing the theme of recipes with zucchini, we offer you a recipe for cooking oven-baked zucchini with vegetable filling. Such a recipe will be very useful both during the fasting period and for vegetarians or those who do not consume meat products. If you wish, you can not sprinkle the zucchini with cheese, but replace it with sour cream or low-fat yogurt. Turn on your imagination and start cooking!

Rinse the leeks under running water, put them on a kitchen towel and let them dry a little. Then chop it finely.

We wash the bell pepper, remove the stalk and seeds, cut each half in half lengthwise and chop it finely. We clean the carrots, wash and rub on a coarse grater. Rinse the tomatoes and cut them into small cubes.

We wash the rice several times in cool running water, put it in a saucepan, fill it with water 1: 2 and put it on fire. Bring to a boil, reduce heat and boil rice until tender. Remove the finished rice from heat.

Put the carrots in a preheated pan with vegetable oil, fry them over medium heat for 3-4 minutes.

Then add tomatoes to the carrots, mix and fry for another 3-5 minutes.

After the tomatoes, add chopped peppers to the vegetables, mix and fry for another 3-5 minutes.

Last but not least, add the leeks to the vegetables. Mix and remove from heat.

Put the sautéed vegetables in a saucepan to the boiled rice, add the egg, salt, spices and mix well.

We wash the zucchini, carefully remove the stalk and peel it. Then cut the zucchini in half lengthwise and clean the core with a teaspoon.

Put the peeled zucchini in a baking dish and stuff it with the filling, tamping it a little with a spoon.

Then sprinkle the zucchini with cheese grated on a coarse grater (you can use the cheese according to your taste: hard, mozzarella or processed).

We set the form with zucchini to bake in an oven preheated to 200 degrees for 30-35 minutes.
