I love simple and at the same time beautiful food, which does not take a lot of time and at the same time delivers gastronomic pleasure. I propose to cook a quick and tasty dish - squash boats with minced meat.

Prepare the required ingredients for the stuffed zucchini. Wash and dry the zucchini thoroughly. Trim the ends of the zucchini and cut in half lengthwise. Use a tablespoon to scoop out the pulp.

Peel the onions and chop finely. Heat the pan well, add a small amount of vegetable oil, and then put onions. Stir occasionally, fry until golden brown. Then finely chop the pulp that was removed from the zucchini and add to the onion, stir and cook until the juice completely evaporates.

Transfer the fried onions and zucchini to a bowl. Put the minced meat in the pan, salt and add black pepper to taste. Stir and sauté until the ground beef completely changes color. Then add the sautéed vegetables, mix thoroughly and cook for a few more minutes.

Peel the garlic and chop with a knife or pass through a press. Add to the filling and mix well. Cover the baking sheet with foil. Stuff the squash boats with the prepared filling and place on a baking sheet. Place the baking sheet in a preheated oven and bake at 180 degrees for about 30-35 minutes.

Rinse the parsley under water, dry and chop finely with a knife. Wash the tomatoes and cut into thin slices. Sprinkle greens on the boats 7 minutes before cooking, arrange the tomato slices. Grate the Mozzarella cheese on a coarse grater and sprinkle the zucchini on top. Remove the finished dish from the oven, serve in portions, decorate with sprigs of fresh herbs.
