Zucchini boats with minced meat and tomatoes in the oven

I propose to use a wonderful option for dinner and cook zucchini boats with minced meat and tomatoes. Squash boats are juicy and very tasty. Such a dish can be served at a festive celebration as a main hot dish.

Ingredients

Cooking process

step 1 out of 6
Wash the zucchini thoroughly in cool running water, and then dry. Cut the zucchini lengthwise into two parts. Use a spoon to scoop out the pulp. Chop the pulp of the zucchini with a sharp knife.
step 2 out of 6
Brush the prepared zucchini inside with olive oil, and then place on a baking sheet, cut side down. Place the baking sheet in an oven preheated to 180 degrees and bake the zucchini for about 15 minutes.
step 3 out of 6
Peel and chop onions and garlic. Preheat a skillet, brush with olive oil, then add vegetables. Fry a little. Add chopped zucchini and minced meat, stir and cook until the juice evaporates completely. Rinse the parsley, dry and chop finely. Add to skillet and stir. Season with salt and pepper, fry for a couple of minutes and remove from heat.
step 4 out of 6
Remove the courgette boats from the oven, turn over, lightly salt and stuff with the prepared filling.
step 5 out of 6
Wash the tomatoes thoroughly in cool water and cut into thin semicircles. Spread them evenly over the filling, add a little salt and pepper. Place the baking sheet in the oven and bake the boats at 180 degrees for about 20-30 minutes. Grate the mozzarella cheese on a coarse grater and sprinkle the zucchini 5 minutes until tender.
step 6 out of 6
Carefully remove the finished zucchini boats with minced meat and tomatoes from the oven, cool slightly, arrange on plates and serve in portions, garnished with leaves of fresh herbs.

Bon Appetit!
