Zucchini boats with minced meat PP

Such "boats" not only perfectly diversify the everyday menu, but also successfully complement the festive table. Despite the fact that this is a fairly hearty dish, there are no extra calories in it. We use minced meat for the filling, and mayonnaise is light. If desired, it can be completely replaced with sour cream. When serving, do not forget to generously sprinkle the stuffed zucchini with chopped herbs - this will not only add a fresh aroma to the dish, but also enrich it with additional vitamins.

For the preparation of "boats" it is better to use young small squash. Such fruits can be used together with the skin, their flesh is tender, and their dimensions make it possible to arrange just a portioned "boat". Wash the zucchini and dry it. We cut off the ends, and cut the fruits themselves lengthwise into two equal halves.

Using a teaspoon, extract the squash pulp from each half along with the young seeds. The walls of the resulting "boat" should be no thinner than one centimeter. We do not throw out the extracted mass - later we use it for the filling.

We put the resulting "boats" on a baking sheet greased with vegetable oil with the cut down and put in an oven preheated to 180 degrees on the middle level. We bake for fifteen minutes. Pre-baking the zucchini will make them juicier in the ready-made dish. After baking, let the zucchini cool slightly.

While the zucchini is baking, put the minced chicken in a wide bowl. Peel the onions and cut them into small cubes. Wipe the champignons with a damp cloth and chop finely. Heat a small amount of vegetable oil in a frying pan and fry the chopped onion in it. When the onion becomes transparent, add the mushrooms, stir and continue cooking for a couple of minutes. Then remove from the stove and let the mixture cool slightly.

Grind the previously extracted zucchini pulp with a knife or grate. Add the pulp to the bowl to the minced chicken.

Add cooled onions with mushrooms.

Add salt, black pepper and chicken spice mixture. Mix the mass thoroughly with a spoon so that all the components mix with each other.

Turn the pre-baked zucchini upside down and sprinkle with a little salt and black pepper.

We fill the boats with the prepared filling. We put the minced meat quite tightly, because when baking it will evaporate some of the moisture and decrease slightly in volume.

Cover the minced meat with a thin layer of mayonnaise or sour cream. Cut the tomatoes into transverse circles. We put three or four circles on each "boat".

Rub the hard cheese on a fine grater and sprinkle it on the boats over the tomatoes.

Preheat the oven to two hundred degrees and put the prepared boats on the middle level. We bake the zucchini for thirty to forty minutes until golden brown. Sprinkle hot "boats" with chopped parsley and serve hot.
