Zucchini must be thoroughly rinsed, cut lengthwise into two parts and, with a teaspoon, scrub the pulp with seeds. We do not throw it away, but chop it with a knife. At the very beginning, you can already turn on the oven for heating, setting the temperature to 180 degrees.

Finely chop the peeled onions and fry in a preheated pan with a little vegetable oil.

Add the washed and chopped champignons to the onion, fry everything together for about 3-4 minutes.

Next, we send the previously chopped squash pulp into the pan. Mix everything and simmer for about 5-7 minutes, until the excess liquid evaporates.

At the very end, add salt, ground pepper, Provencal herbs and sour cream to the rest of the ingredients. Stir, keep on fire for a couple of minutes and turn off the gas.
