Zucchini boats with minced chicken

A light but satisfying dish can be prepared with zucchini and chicken. Moreover, it can be served on the table without a side dish, and even chilled it will be very tasty.

Wash the zucchini, cut off the ends and cut each vegetable in half.

Then you need to make boats from the halves of the zucchini. Gently remove the pulp with a teaspoon, leaving the walls no more than one centimeter thick. In order for the boats to be more stable, you can cut a strip of a few millimeters from the back.

Peel the onion and chop it finely or grate it. Mix the onion with the minced chicken, add salt and spices to taste. Fill the boats with minced meat.

Cut the cheese into small cubes. Wash the tomato and chop finely. In a separate bowl, combine cheese, tomatoes, and a tablespoon of mayonnaise. Spread this mixture over the minced meat.

Cover a baking sheet with baking paper, sprinkle with sunflower oil. Place the stuffed boats on a baking sheet.

Place the baking sheet in an oven preheated to 200 degrees and bake the zucchini for 30-40 minutes until tender. When the zucchini becomes soft and an appetizing golden brown crust forms on top, the dish can be removed from the oven. Garnish the chicken squash boats with herbs and serve.
