A light vegetable and chicken dinner - we have a great idea! Let's cook stuffed zucchini boats with you. The combination of a large amount of sautéed vegetables and tender chicken fillet, under a crispy cheese crust is bliss! We are sure that you will not remain indifferent to this dish.

We wash the chicken fillet under running water, pat it with a paper towel and cut into small cubes. Put the fillets in a preheated pan with olive oil and fry for 10-15 minutes.

Peel and wash the onions, chop them into small cubes. Peel and rub the carrots on a coarse grater. Add vegetables to chicken fillet, stir and simmer over low heat for about 5 minutes.

We wash the bell peppers, remove the stalk and seeds, cut into thin strips and send them to the pan with vegetables. Scald the tomatoes with boiling water and peel them off. Cut them into cubes and send them to the pan with fillets and vegetables. Add salt, pepper and spices, mix everything well and simmer for 8-10 minutes over low heat.

We wash the zucchini under running water, cut it in half lengthwise, and clean the core with a teaspoon. We put the zucchini in a baking dish and stuff the zucchini with the prepared filling, tamping it a little with a spoon. We put the form with zucchini in an oven preheated to 180 degrees and bake for 20-25 minutes. 5 minutes before the end of cooking, open the oven and sprinkle the zucchini with cheese grated on a coarse grater.
