Zucchini boats with meat

The next vegetable season will begin very soon and a large assortment of fresh vegetables will appear on store shelves. Among which there will, of course, be a zucchini. Many people know its useful and dietary properties, as well as a huge number of dishes that can be prepared using it. For example, stuffed zucchini baked in the oven. You can stuff zucchini with both meat and vegetables. In our recipe, we combined both, it turned out just great!

For the preparation of zucchini, we used our own minced pork. To do this, we took a piece of pork shoulder, washed it, dried it with a paper towel and chopped it in a meat grinder.

Peel the onion, rinse and chop into thin half rings. We wash the rice, fill it with water 1: 1, put on fire and bring to a boil, then remove from heat and leave to steam.

We clean the carrots, wash and rub on a coarse grater.

Put onions and carrots in a preheated pan with vegetable oil and sauté for several minutes over medium heat, then remove from the stove.

Add minced meat, rice, salt and pepper to the pan to the vegetables, mix well.

We wash the young zucchini, remove the stalk and cut the zucchini in half lengthwise. Using a teaspoon, peel the zucchini from the core. In order to use the zucchini sparingly, the zucchini core can be finely chopped and mixed with the filling, it will turn out to be more juicy.

Stuff the zucchini with the filling. We wash the tomatoes, wipe them with a towel, cut them in half and chop them into thin slices. We spread the tomato slices overlapping each other on top of the filling.

Rub the cheese on a coarse grater and sprinkle it with zucchini. Put the zucchini in a baking dish, cover with foil and put in an oven preheated to 180 degrees for 40 minutes. After the time has elapsed, open the oven, remove the foil and put the zucchini back in the oven for another 5-10 minutes so that the cheese on the zucchini is browned.
