Zucchini boats with vegetables

I propose to cook a healthy low-calorie dish - zucchini boats with vegetables. For the filling, you can choose vegetables according to your own taste preferences. The dish is easy to prepare and light even for a late dinner.

Prepare the required ingredients for the stuffed zucchini. Thoroughly wash the squash and carrots, pat dry, trim off the ends, and peel them with a vegetable peeler. You do not need to peel young zucchini. Cut the carrots into small cubes. Also rinse the dill and garlic arrows, dry and chop.

Using a tablespoon, remove the seed core from the courgettes. Brush the squash boats with a little vegetable oil and place on a baking sheet or in a baking dish. Place the baking sheet in a preheated oven and bake the boats at 190 degrees for about 30-35 minutes.

In the meantime, prepare the filling. Heat the pan well over medium heat and brush with a little vegetable oil. Finely chop the zucchini pulp and place in a preheated pan along with carrots and garlic arrows. Stir occasionally, simmer over low heat for 10-15 minutes.
