Lula kebab on the fire recipe

Lula kebab, a meat dish widespread in the Caucasus. It can be cooked in the home kitchen and on the grill. In nature, it is prepared in two ways, stringing meat on skewers, or simply fried meat on a wire rack, it must be said that the second option is simpler and more convenient.

Wash the lamb well, dry it, cut into pieces, scroll through a meat grinder.

Cut the bacon into small pieces. Peel the onion, cut into quarters. Grind the onion and 250 grams of bacon separately in a meat grinder.

Mix the chopped meat, bacon and onion, once again scroll the whole mass through a meat grinder. Add salt, pepper and basil, knead the minced meat for at least 7-8 minutes with both hands. Minced meat must be beaten off well so that it does not fall apart during the cooking process. Collect a lump of minced meat with your hands and hit it with force on the table, repeat this several times. Each time the minced meat will become more homogeneous and less spread over the table. It will take you about 10 minutes. Then put the minced meat in the refrigerator for an hour.

Remove the minced meat from the refrigerator, moisten your hands in warm water, stick the skewers with small lumps of minced meat to make sausages of 10-15 centimeters.
