If you want homemade aromatic pastries for a family table, soft muffins with raisins will be very useful. Knead the dough for fifteen minutes. And the oven will "cope" with muffins in less than half an hour. Porous, with a golden brown crust and a high "cap", these muffins look very appetizing and attractive. Raisins pleasantly refresh the sweet crumb - this combination of flavors does not require any additions. Except, perhaps, a cup of tea.

We break the eggs into a large bowl and cover with granulated sugar. Beat the components with a mixer at high speed until the sugar crystals are completely dissolved and a light dense foam is obtained. Without stopping the work of the mixer, pour kefir into the egg foam in a thin stream.

Sift the flour together with the baking powder into the resulting liquid mixture. Also add salt and vanilla sugar.

Add raisins. We pre-wash the dried fruits in hot water, sort through and dry with a paper towel. Knead the dough using a mixer or manually. It is important to stir all the flour lumps and achieve uniformity.

The dough is medium thick and resembles sour cream. Consistency - flowing, slightly viscous.

Grease the muffin baking tins with vegetable oil. When using a silicone mold, lubrication is not required. We lay out the dough in the prepared forms using a tablespoon. You need to fill the molds by two-thirds of their volume - we take into account that the dough will rise when baking. Preheat the oven to a temperature of 180 degrees.

We put the forms with the dough on the middle level of the hot oven and bake the muffins for twenty to twenty five minutes. During baking, the cupcakes will rise, stretching out the “caps” on the surface, and will noticeably blush with a golden color. If in doubt about readiness, you can pierce one of the muffins with a toothpick. At the exit, it should be completely dry, without traces of damp dough. We take the finished products out of the oven, release them from the molds and cool them completely. Before serving, sprinkle the surface of the muffins with a thin layer of powdered sugar.
