Kefir muffins with cheese

Snack cheese muffins are great for breakfast and will help out when you need a snack during the day. Creamy, delicate, porous, with a crispy crust - each piece has just the perfect balance of taste and texture. Interestingly, when using different types of cheese, you can get different shades of taste and the degree of "stickiness" of the crumb. You can "play" every time you knead the dough for these muffins with a new cheese.

Grate the cheese with large holes. Place the grated cheese in a bowl, add eggs, vegetable oil and sour cream to it. Shake the mass with a fork until the components are mixed. You do not need to be zealous and achieve relative homogeneity - it is enough to get a semi-liquid structural mixture.

Sift the flour along with the baking powder on top of the cheese and egg mass. Next, add granulated sugar and salt. Knead the dough with a fork. At this stage, you need to vigorously stir the resulting mass in order to break up all the flour lumps and evenly distribute the baking powder. The finished dough should not be thick - it pours and resembles sour cream in consistency.

Preparing baking dishes. If they are silicone, then you do not need to lubricate them with anything. Molds made of another material should be greased with a small amount of vegetable oil so that the muffins do not stick to the bottom and walls. We lay out the dough on the prepared molds, filling them so that about one centimeter of free space remains on top. During baking, the dough will slightly increase in volume and form a "cap" on the surface.

Preheat the oven to a temperature of 200 degrees. We put the forms with the dough on the middle level of an already hot oven. Baking cheese muffins takes twenty to twenty-five minutes. It is important not to dry them out. Once the muffins have risen and are well browned, they can be removed from the oven. You can serve cheese muffins in any form: hot, warm or cold. The taste and texture of the crumb differ at different temperature conditions - we taste and enjoy!
