Muffins with kefir in silicone molds

Muffins are a very convenient type of baking that requires a minimum of ingredients and very little time. We offer a recipe for actually a basic kefir dough, which does not require any additions and as a result gives very tasty, porous and soft muffins. But if there is a desire to experiment, then the dough will easily accept dry additives in the form of raisins, nuts, pieces of marmalade, chocolate drops, etc.

Break eggs into a large bowl and pour granulated sugar. Mix the ingredients with a whisk until a liquid foamy mass is obtained. You do not need to beat the eggs until they are dense foam, as, for example, for biscuit dough. This is the beauty of mixing muffins - it is enough to simply mix the liquid components until smooth.

Pour kefir into the egg-sugar mixture. The fat content of a fermented milk drink can be absolutely anyone. After kefir, add odorless vegetable oil and vanillin. Mix everything together until smooth. Sift the flour together with the baking powder and add to the liquid mixture. We knead the dough with a whisk, trying to break all the flour lumps.

It is very convenient to bake muffins in silicone molds. They do not require greasing, make ready-made muffins easier to remove, and are easy to clean after use. We fill the silicone molds with the prepared dough to two-thirds of their volume - during baking, the muffins will rise noticeably.

Preheat the oven to a temperature of 180 degrees. Place the silicone molds with the dough on the wire rack and place it on the middle level of the hot oven. We bake the muffins for twenty to twenty five minutes until golden brown. To check the readiness of the dough in case of doubt, we pierce one of the muffins with a toothpick: at the exit it should remain dry, without traces of damp dough. We take out the finished muffins from the oven, let them cool slightly so as not to burn themselves, and remove the forms. Transfer the cupcakes to a plate and leave to cool completely. Sprinkle them with powdered sugar for decoration.
