When you want to please yourself with juicy aromatic pastries, you should remember about muffins with apples and cottage cheese. To bake them, you do not need to mess around in the kitchen for a long time and have a complex set of products - muffins are prepared quickly and easily. Such muffins will be especially tasty if the cottage cheese is fat and the apples are sour. Against the background of sweet dough, a light apple sourness will come in handy.

Put the components for the liquid component of the dough into a large bowl: cottage cheese, eggs, granulated sugar and melted butter. Mix everything together with a mixer at medium speed or by hand with a whisk.

Pour flour, potato starch, vanillin and baking powder on top of the liquid curd mass. We knead the dough - it turns out to be of medium density, heterogeneous due to curd grains. We wash the apples, dry them and cut them into four parts. Cut out the seed pod and cut off the peel. Rub the apple pulp on a coarse grater or cut it into small cubes with a knife. Pour the crushed apples into the curd dough and mix gently.

Lubricate muffin molds with a thin layer of vegetable oil. If the molds are silicone, then you do not need to lubricate them with anything. We spread the cooked dough in the shapes with a spoon. Do not fill the tins by more than two-thirds of their volume - the dough rises when baking.

Preheat the oven to a temperature of 180 degrees. We put the tins with the dough on the wire rack and place them on the middle level of the oven. We bake the muffins for twenty to twenty-five minutes, until they rise and noticeably brown. We take the finished muffins out of the oven, remove them from the molds and cool them completely. Cooled muffins taste better as the dough becomes more textured and the line between the apple pieces and crumb appears.
