One of the easiest ways to stock your raspberries for the winter is to simply freeze them. You can freeze just clean berries, without pre-processing, or you can wipe the raw materials with sugar and pour the resulting puree into containers. In this form, raspberries are sweeter and after defrosting they are immediately ready for serving, for example, for pancakes or cheese cakes.

We prepare the raw materials: raspberries must be carefully sorted out, random debris must be removed, specimens with defects, rotten and strong contamination must be removed. It is undesirable to wash the berries, as they quickly absorb moisture and become watery, which adversely affects the taste of the workpiece. If raspberries still require rinsing, we do it quickly, with cool water, placing the berries in a colander in portions and, after rinsing, immediately sprinkling them on a towel to dry. Place the prepared raspberries in a deep container.
Grind raspberries with sugar in any way you can. If you use a hand blender or stand blender, the puree will be smooth. When chopped with a meat grinder or hand pusher, the raspberry mass will come out more textured. We remove the crushed mixture of raspberries and sugar in the refrigerator for two to three hours so that the crystals can dissolve.
