This method of harvesting raspberries allows you to preserve vitamins and minimize the time that needs to be spent on cooking. The berries will need to be sorted out, rinsed if necessary and rubbed with sugar. We put the resulting raw puree in jars and store in a cool, dark place.

Servings - 2.5 liters of ready-made crushed raspberries approximately.

We pay special attention to the preparation of raspberries, since the quality of the harvest will depend on this. First of all, we sort out the berries from accidental inclusions, debris and defective specimens. If the raspberries are visually clean, then don't wash them. If the raw materials still require washing, then put the raspberries in small portions in a sieve and quickly rinse with cool water. After that, we place the berries on a towel and let them dry from excess moisture.

Pour the prepared raspberries into a deep bowl, cover them with granulated sugar and stir with a spatula.

With the help of a pusher, crush the berries with sugar until a relatively homogeneous puree is obtained. Leave the crushed raspberries for an hour or two at room temperature so that the sugar can completely dissolve. Then mix well again - there should be no crystals left.

The jars with lids are thoroughly washed and then sterilized in any usual way. Let the container dry completely. Pour the raspberry mass with sugar into prepared dry jars and close with dry sterile lids.
