Mannik on kefir with flour

We offer to cook tender manna on kefir. It is loose and crumbly, with a ruddy dense crust. An unusual addition is mayonnaise, it adds fluffiness to the dough, and also contributes to a golden brown crust.

To begin with, in a wide bowl, mix all the liquid components: eggs, mayonnaise, kefir. Stir everything with a whisk until completely homogeneous. There is no need to whip the mixture.

In a separate bowl, mix dry foods: semolina, sugar, vanilla sugar and pre-sifted flour.

Pour the liquid mass into a bowl with dry ingredients in a small stream, while stirring with a whisk. At the end of the addition, whisk well again and cover the bowl with cling film. Leave the dough in this position for one hour. This is so that the semolina softens enough before baking.

Melt the butter on the stove or in the microwave and add soda to it, stir the mixture.

Pour the butter and soda into the dough and knead with a whisk until the ingredients are completely mixed. There should be no remaining areas of oil.

Preparing a baking dish: grease it well with butter and sprinkle with breadcrumbs or semolina.

Pour the dough into a prepared baking dish and place in an oven preheated to 180 degrees on a medium level. We bake for an hour, focusing on a specific oven. At the end of baking, we check the readiness by sticking a toothpick or match into the center of the manna. If it came out dry, you can get the manna. If you came out with the rest of the dough, you need to bake a little more.

We take the finished manna out of the oven, let it cool slightly and remove it from the mold. Let cool completely, sprinkle with icing sugar if desired. Cut into portions and serve.
