Instant pickled cabbage with carrots

Cabbage, pickled in large pieces, differs in its taste from cabbage, chopped into strips. It turns out to be crisper and juicier, but takes longer to marinate. It is cooked in a 3-liter jar, which allows the pieces to be packed quite tightly and the process is faster. Cabbage is supplemented with carrots and garlic, and stacked in layers, and seasoned before eating. We marinate the cabbage in a quick way, that is, pouring it with hot marinade.

The first step is to prepare all the ingredients for pickling cabbage in the amount specified in the recipe. Remove the outer leaves from the cabbage head. Peel carrots and garlic cloves. Wash and dry a 3-liter jar.

Cut the cabbage into large pieces with a sharp knife so that they pass freely through the neck of the jar. Chop the carrots on a coarse grater. Put a few cabbage pieces in a jar.

Lay a layer of grated carrots on top of the cabbage and add 2 cloves of garlic through the garlic.

Then put two more layers of cabbage, shifting them with carrots and garlic. The top layer should be carrots. Tamp each layer well with a wooden rolling pin.

In a separate saucepan, boil the marinade using the amount of water, sugar and salt specified in the recipe. Pour vinegar into the boiling marinade, stir and turn off the heat.

Pour the boiling marinade over the vegetables in the jar. If it is not enough, then add boiling water to the very top of the jar. Leave the jar of cabbage for 12 hours at home temperature and leave the lid on. There is no need to place the load on top, since the bank with its shape will keep the cabbage from floating.

Then cover the cabbage with a plastic lid and put it in the refrigerator. After 12 hours, the pickled cabbage will be ready and can be cut into small pieces and seasoned with oil and served. This cabbage can be kept in the refrigerator for up to a month.
