Express cabbage is the most accurate name for this appetizer, because pickling vegetables so quickly, quite recently, seemed unrealistic. This is a real salvation when the guests are already on the doorstep, and there is nothing special to treat them to. Cabbage is soaked in hot brine in a matter of hours!

Remove stale leaves from the cabbage, and chop the rest as finely as possible with a knife or in a food processor.

Cut the bell pepper in half and remove all the seeds, then cut into thin strips and then again in half. Peel the carrots and rub on a coarse or medium grater.

Finely chop the garlic or pass it through a press and send it to the already chopped vegetables.

To prepare the brine, we need a liter of water, add freshly ground pepper and peas, bay leaves, salt, granulated sugar to it, pour in 10 milliliters of nine percent vinegar and continue cooking for 2-3 minutes after boiling.
