The blue leg is a mushroom that has several names. You may come across names such as bluefoot, lilac-footed row, podotavnik, or blue root. The color of the mushrooms is instantly striking. Blue legs have a delicate taste and a light, unobtrusive fruity aroma. I propose to cook pickled blue legs for the winter in jars.

Carefully sort out the bruises, peel and rinse in cold running water. Cut large specimens into several pieces. Put the washed blue feet in a deep saucepan. Put on moderate heat and cover with cold water so that it completely covers the mushrooms. Bring to a boil and cook the mushrooms for 30 minutes, stirring occasionally and skimming.

Drain the cooked blue feet through a sieve or colander. Rinse well under cold water, let excess liquid drain.

In the meantime, rinse the jars thoroughly in warm water and baking soda, then sterilize the jars in a convenient way - in the microwave, in the oven, or in a water bath. Pour boiling water over the lids or boil in a separate saucepan for 7-10 minutes.

Prepare the marinade in another saucepan. Pour in the required amount of cold drinking water. Then add salt, cloves, black peppercorns, allspice, ground cinnamon, bay leaf and coriander seeds. Put on moderate heat and bring to a boil. Boil for about 10 minutes.

Pour the prepared marinade into a saucepan with blue feet. Add citric acid. And boil for 10 minutes.

Using a slotted spoon, place the bruises tightly in sterile jars and fill with marinade. Gently roll up hot jars so as not to burn yourself with sterile lids using a seaming machine.

Turn hot jars with pickled blue feet upside down, wrap something warm, and leave in this state until they cool completely. Move the cooled jars with pickled blue feet to a dark, cool place or to the refrigerator for storage.
