Pickled mackerel in tea brine

With a great desire I want to share a magnificent, in my opinion, recipe for a delicious, aromatic pickled mackerel cooked in tea brine. This mackerel is a wonderful cold snack for a festive celebration.

Ingredients

Cooking process

step 1 out of 9
Peel freshly frozen mackerel from fins, tail and head, carefully remove the insides and remove the films.
step 2 out of 9
Rinse the prepared mackerel under running water, and then pat dry with paper towels and cut into small pieces of the same size.
step 3 out of 9
Prepare the marinade. Pour the required amount of cold water into a saucepan. Put on moderate heat and bring to a boil. Lay out the tea bags. Add coarse salt.
step 4 out of 9
Then add granulated sugar.
step 5 out of 9
It is not necessary to use tea in bags, as long as it is black and without additives.
step 6 out of 9
Add black peppercorns, turmeric and bay leaves. Boil for a couple of minutes and remove from heat. Cool the marinade completely. Strain the cooled marinade through a fine sieve.
step 7 out of 9
Prepare a container and place the chopped mackerel pieces in it.
step 8 out of 9
Top with strained marinade. Cover and refrigerate for 3 days.
step 9 out of 9
After the time has passed, remove the mackerel from the tea marinade and pat dry with paper towels, place on a plate and serve, garnished with your favorite herbs.

Bon Appetit!
