First, we need to process the watermelon. Wash it well in warm water. It is advisable to use soap. Then place it on a towel and leave to dry. Then cut the watermelon in half. We only need a part of it. Cut the desired half into small pieces. Be sure to check that they fit inside the can. If you want, you can completely peel the watermelon or remove only the green part of it.

We proceed to the preparation of cans and lids for future blanks. We wash them in warm water. You can use baking soda or regular laundry soap that you can find in your kitchen for this. Then rinse them well. Dry the jars with a kitchen towel. Pour water 2-3 centimeters high into them. One at a time, place the jars in the microwave. Turn it on at full power and leave the jar for 4-5 minutes. After that, transfer it to a towel and leave to dry. Pour some cold water into a small saucepan. Put it on high heat and wait for the water to boil. Scald can lids with boiling water.

Fill the jars with slices of watermelon. Make sure they lie loose. Fill a pot with water. It is best to use filtered or bottled water. Tap water can impart a characteristic unpleasant aftertaste to food. Transfer it to fire. Wait for the water to boil. Pour boiling water over the watermelons to the very top of the jar. Cover it with a lid and leave for 5-10 minutes. During this time, the watermelon slices should be steamed well.

When the time is up, pour the liquid into a small saucepan. Put it on fire. When the water starts to boil, add some of the granulated sugar to it. Stir the solution well so that all crystals dissolve quickly. When all the sugar has been added, add salt to the water. It is very important to use coarse salt, it should not be iodized. Stir the solution again. Be careful not to reduce the concentration of sugar and salt. Continue to cook it for 5-7 minutes over low heat. Add vinegar and citric acid to the saucepan. Stir the solution and remove the pot from the stove.

Pour the hot solution over the watermelon wedges. Add black peppercorns and bay leaves to them. Screw on the caps. Turn the jars over and place them on a tea towel to spread on a table or any other flat surface. In this position, the lid will undergo additional heat treatment. Wrap the jars in a towel or small blanket.Leave them to cool. Choose the coolest and darkest place in your home in advance. When the jars are completely cool, transfer them to this place and leave until winter.
