Cooking process

We start cooking by processing the watermelon. Wash it well in warm water and soap. It is advisable to do this several times. Spread a tea towel on the table and place the watermelon on top of it. Leave it to dry completely. After that, cut the watermelon into circles 2-3 centimeters thick and divide them into sectors that will definitely be able to crawl into the jar. Optionally, you can trim off the entire rind, or only cut off the green portion.
step 2 out of 6
We turn to sterilization of cans. First, rinse them with baking soda. You can also use regular laundry soap. Pour cold water into a small saucepan. Put it on high heat. Wait for the water to boil. After that, scald the jars and lids with boiling water. We will carry out further sterilization with the help of steam. You can use a kettle or pot for this purpose. In this recipe, we will use a teapot for convenience. We fill it with cold water. We put the kettle on a high fire. When steam starts to come out of its spout, and the water boils, place the jar on the spout so that it fills with steam. Keep it in this position for 5 minutes. During this time, spread tea towels on the table. Place jars on top of them and let them dry. You do not need to wipe the jars additionally.
step 3 out of 6
When the jars are completely dry, fill them with watermelon slices. Pour cold water into the kettle. Place it on the stove. Wait for the water to boil. After that, pour boiling water into the jar to the very top. Cover it with a lid and leave the watermelons for about 10-15 minutes. During this time, the slices should be steamed.
step 4 out of 6
When the time is up, pour the water from the can into the pot. To do this as neatly as possible, use a lid with holes. Place the pot over high heat. When the water starts to boil, add the first portion of granulated sugar to it. Stir the solution constantly to dissolve the sugar faster. When it is completely added, add salt to the water. Stir the solution again. Boil it for another 2-3 minutes. If you are worried that the preparation may not reach the winter, add a little citric acid to the solution.
step 5 out of 6
Add two aspirin tablets to the jar of watermelon wedges. Strain the prepared solution of water, granulated sugar and salt. You can use cheesecloth or a sieve for this. Pour the solution into a jar of watermelon wedges. Screw the cover back on. Turn the jar over and place it on a towel, which you need to spread on a flat surface in advance. Due to this position and the hot solution, the lid will undergo additional heat treatment. Wrap the jar in a warm blanket or blanket. Leave it to cool completely.During this time, choose the darkest and coolest place in which the jars with watermelon slices will stand. When the jars are completely cool, transfer them there. There, the watermelon slices will wait for their time.
