Pickled watermelons with mustard for the winter

This recipe contains an ingredient that gives the watermelon its unusual sweet taste with a bit of pungency. You do not have to spend too much of your time or energy on its preparation. And you can find all the necessary ingredients in a regular grocery store.

Special attention should be paid to the processing of the watermelon. To accurately remove all dirt from its surface and remove possible microbes, wash the berries in warm or hot water. You can use soap in this process. Transfer the processed watermelon to a tea towel or a few paper towels to absorb any excess moisture. When the watermelon is completely dry, cut it into small pieces. Make sure that the watermelon wedges crawl through the inside of the jar. Optionally, you can cut off the rind of the watermelon or just the green part. You can also roll the watermelon slices together with the rind. Set aside the finished watermelon wedges.

The next step will be the processing of cans. They will store pieces of watermelon. Be sure to rinse the jars under running water using baking soda or laundry soap. After that, put them on a towel, which should be laid out on the table in advance. Pour some water into a pot or kettle. Transfer the cookware to high heat. When the water boils, scald the lids with boiling water. The next stage of sterilization will be carried out using steam. To do this, you have to use a kettle. Pour cold water into it. Put it on fire. When the water starts to boil, place the jar on the spout of the kettle so that it fills with steam. Keep it like this for 3 minutes. Then place the jars back on the towel. If you don't have a kettle in your kitchen, use a regular saucepan.

When the jars are completely dry, start spreading the watermelon slices in them. Pour water into a pot. Place it on the stove. When the water boils, pour it into the jars. Cover them with a lid and let the watermelons stand for 10-15 minutes.

Then drain the water back into the pot. To do this carefully and not to spill liquid, use a lid with holes for this. Then put the pot over high heat. When the water boils, add a small amount of sugar to it. Mix the resulting solution well. When all the granulated sugar has dissolved safely, add some salt to the water. The last ingredient will be citric acid. It will help your roll up to winter and prevent it from deteriorating.

Pour dry mustard into jars of watermelons and dip bay leaves into it. Then pour the hot solution over the pieces. Screw on the caps carefully. If cracks begin to appear on the can during this process, you will have to replace the container. Place the jars on a towel after turning them over.This position is very advantageous: in this way the lid is subjected to additional heat treatment. Optionally, you can wrap the jars in a large towel or blanket. Wait for the jars to cool completely. Then transfer them to a cool place.
