Peel the watermelon slices from the rind or only from its green part. Set them aside.

Put it on high heat. When the water starts to boil, place the jar on the spout of the kettle so that it fills with steam. Hold the jar in this position for 2-3 minutes. Fill the jars with watermelon slices. Pour water into a saucepan and transfer it to the stove. It is advisable to use bottled water. When the water boils, pour boiling water over the watermelons to the very top. Cover the jar with a lid. Leave the watermelon wedges to infuse for about 10-15 minutes.

When the time is up, gently pour the liquid into the saucepan. You can use a perforated cover to do this. Place the pot over high heat. Wait for the water to boil. Add the first serving of granulated sugar to the saucepan. Stir the solution constantly. This will help the crystals dissolve faster. When all the sugar has been added, add salt to the liquid. Stir the solution again. Then add citric acid to it. Cook the marinade over low heat for 5 minutes. Then add vinegar to it and remove the pot from the stove.

Pour the hot marinade over the watermelon wedges. Screw the cover back on gently. Make sure that no cracks appear on the jar. If this happens, you will have to change the container.
