The amount of ingredients in this recipe is enough for 4 liter cans. We will start preparing the seamers by processing our berries. Place the watermelon in the sink and turn on warm or hot water. Wash it well with soap. It is advisable to do this several times. Then place the watermelon on a regular kitchen towel or on a few paper towels to absorb any excess moisture.
Now we need to sterilize all the jars. First, rinse them well using the baking soda or laundry soap you will find in your kitchen. You can choose the further sterilization method yourself. In this recipe, we will carry out it using a microwave oven. Pour cold water into the jar. Its height should be about 3 centimeters. Place the jar in the microwave for 5 minutes. After that, take out the jar, drain the water and place it on a towel, which must be placed on the kitchen table in advance. Place the lids in a small bowl and cover with water. Microwave them for five minutes too. When the time is up, drain the water and place the lids next to the cans.
Fill dry one-liter jars with watermelon wedges. Arrange them very neatly and compactly so that as many pieces as possible fit in the jar. Pour cold water into a saucepan. Place the cookware over high heat. When the water starts to boil, remove the pan from the stove and pour boiling water over the watermelon slices. Place the lid on the jar and let the watermelon steep for 15 minutes.
When the time is up, drain the water back into the pot. It is advisable to use a lid with holes for this process. This is how you do it as carefully as possible. Put the cookware back on the fire. When the water starts to boil, add granulated sugar to it. Stir the solution well to dissolve the crystals quickly. Then add salt to the water. Stir the resulting brine again. Add citric acid as the last ingredient. It will not let your harvests go bad, so you can be sure that the watermelons will be able to reach until winter.
Add a few black peppercorns, bay leaves, and a teaspoon of vinegar to the watermelon jars.Fill the slices with the prepared brine. Screw on the caps carefully. Make sure that no damage appears on the surface of the cans. Place the jars on a kitchen towel after turning them over. You can wrap them in a blanket or a small blanket. When the jars are completely cool, transfer them to a cool, dark place.
