Hot pickled milk mushrooms with vinegar

Pickled milk mushrooms are always a welcome snack on the table. And in the family circle they are loved, and as part of the festive menu they are appropriate. To make the mushrooms crispy and dense, you need to properly prepare and pickle them. All the details of the process, as well as the exact proportions of the products, are below in this recipe.

We clean the milk mushrooms from dirt on the surface. If there are areas with defects, we cut them out. We wash the prepared mushrooms thoroughly in a large amount of water to achieve perfect cleanliness. We put the milk mushrooms in a large saucepan and fill with an arbitrary amount of water (the mushrooms must be covered). Place the pot on the stove and bring the contents to a boil. Cook the milk mushrooms for thirty minutes, periodically skimming off the foam. After boiling, put them in a colander.

Peel the onions, rinse and cut into thin half rings.

Cooking the marinade. To do this, pour water in the specified amount into a saucepan, add salt, granulated sugar, bay leaf, ground cinnamon and allspice peas. Pour in half rings of onions. Bring the marinade to a boil.

Immerse the boiled milk mushrooms in a boiling marinade, mix and cook for ten minutes at low temperature. At the end of cooking, pour in the vinegar, mix it into the total mass and turn off the stove.

I wash the jars and lids with a soda solution and sterilize in any way that suits you. Put hot milk mushrooms in prepared jars and fill with marinade.

We tighten the lids and turn the cans upside down. We wrap the seams in a warm blanket for slow cooling - this way the additional mushrooms are sterilized. We put the cooled jars in a cool dark place for storage.
