Wash the zucchini, dry on a kitchen towel. If necessary, trim the thick rind from the courgettes. Cut into zucchini thin slices with a vegetable peeler. Put the zucchini in a large bowl, pour a glass of boiling water over them, cover and leave until the water cools. Sterilize jars for zucchini. Roll up the slices of zucchini into tubes, fold them tightly into a jar. Wash the dill, put the dill sprigs in a jar on top of the zucchini.

For the marinade, boil water in a saucepan, add sugar, vinegar and soy sauce. Pour the ready marinade into a jar of zucchini.
