Have you ever tried crunchy pickled zucchini? Cut into small rings, rolled in a spicy marinade with garlic, horseradish, pepper and dill, they taste amazing! It is very convenient to preserve zucchini in liter jars so that the open twist is not stored in the refrigerator for a long time.

Before starting the harvest, we wash the liter cans with baking soda and rinse them well with water. Then we sterilize the jars in the oven, putting them on the wire rack with the neck down, for 5-7 minutes at a temperature of 110-120 degrees.

Pour water into a saucepan, add salt and sugar, stir and bring the marinade to a boil over medium heat.

After the marinade boils, add vinegar to it, mix and remove from heat.

Zucchini, horseradish leaves and dill umbrellas are washed under running water. Peel the garlic and cut into small cubes.

At the bottom of the jar we put dill, bay leaf, horseradish leaf, pepper and garlic.

Cut the zucchini into rings 1.5-2 cm thick. If the rings seem large to you, you can cut them in half.

Place the zucchini tightly in jars and fill with hot marinade.

Put a cotton napkin at the bottom of a deep saucepan with warm water and put jars of zucchini covered with lids in it. Bring the water in a saucepan to a boil over medium heat, reduce the heat and sterilize the zucchini for 10-12 minutes. Then carefully remove the jars with a grip and close them tightly with lids.

Turn the jars upside down, cover with a terry towel and leave at room temperature until they cool completely. Then we remove the zucchini for storage in a dark, cool place.
