Marinated zucchini is always a great snack. They are juicy, crunchy and perfect for a casual table as well as a festive one. To make the zucchini really tasty, we choose young fruits for pickling: they have the perfect tender pulp, which provides here the most valuable density and delicate texture. This recipe is for a 3 liter jar and does not require sterilization. Instead, vegetables in a jar are processed with boiling water, and the finished piece is wrapped and slowly cools down - this is enough to ensure long-term safe storage.

Carefully wash the zucchini jar with a soda solution and scald with boiling water. We do the same with the lid. We wash the dill inflorescence, horseradish greens and parsley and shake off excess water. Peel the garlic and rinse. At the bottom of the prepared jar, put half a horseradish leaf, a part of parsley, garlic, black peppercorns and mustard seeds.
Wash the zucchini and cut off the ends. We cut each fruit into circles one and a half to two centimeters thick. Since the zucchini is young, there is no need to peel off or peel the seeds. We put mugs of zucchini in a jar on herbs with spices. We do this quite tightly, since during the subsequent processing with boiling water, the zucchini will settle down a little. Together with the zucchini, we also put a washed pod of red hot pepper with a cut stalk in a jar.
Put the remaining half of the horseradish leaf and the second part of the parsley on the stacked zucchini. In a separate container, heat the water to a boil and pour boiling water over the zucchini in a jar. Leave the vegetables to steam for ten minutes. Pour the water from the jar into a saucepan, add salt and granulated sugar to it, bring to a boil. Pour vinegar into a jar with scalded zucchini. Pour zucchini with boiling brine and immediately roll up the lid.
