Marinated zucchini rolls for the winter

Zucchini rolls rolled up in a spicy marinade with vegetables are a whole range of flavors. A rainbow of flowers, consisting of multi-colored zucchini, bright carrots and juicy dill, will delight you not only with its taste characteristics, but will also bring a bright variety to both festive and everyday tables. Delicious and juicy zucchini will serve as an excellent garnish for meat, as well as a great cold appetizer.

First, let's prepare the marinade. Pour water into a saucepan, put it on fire, put sugar and salt, stir and bring to a boil. Boil for 2-3 minutes, then add vinegar and remove marinade from heat.

We wash the seaming cans well with baking soda and rinse with water. We sterilize the jars in the oven at 110-120 degrees for 5-7 minutes, placing them with their neck down on the wire rack. At the bottom of the cooled sterilized jars, we put dill, bay leaves, pepper and onions cut into thin rings. Peel the carrots, rinse and grate for carrots in Korean. We put the carrots in jars, add 2 cloves of garlic to each jar.

We choose young zucchini, with soft skin and unformed seeds. If you want the seams to be more colorful, choose zucchini of different colors. We wash the zucchini under running water, put it on a towel and let it dry a little.

Then, using a vegetable peeler, cut the zucchini into thin slices along the length of the entire fruit.

Pour warm, but not hot, water from the kettle into a deep saucepan, put a cotton napkin on the bottom and put jars of zucchini on it. We put the saucepan on medium heat and bring to a boil the water in which the jars are sterilized. Reduce the heat and leave the rolls to sterilize for 5-7 minutes from the moment of boiling.

We take the finished seams out of the pan using a stick and tighten the lids tightly. Turn the jars upside down and leave to cool completely at room temperature. Then we remove the jars of zucchini in a cool dark place for storage.
