Marinated zucchini with cherry plum

When you mention the combination of zucchini with cherry plum, compote usually comes to mind. However, try this original preparation of young zucchini with onion and cherry plum circles; it will surprise you with its fresh, sweet-spicy taste. Such a bright jar will be a wonderful gift for relatives in winter when visiting.

Wash the zucchini thoroughly, do not remove the skin. Cut the zucchini together with the pulp into large circles.

Peel the onion and cut into half rings.

Sort out cherry plums, select the strongest specimens that will not be damaged during processing. Tear off the cuttings, wash the cherry plum and dry in a colander.

Fold vegetables with cherry plum in sterilized jars, pour boiling water, let stand for 20 minutes. Drain and measure 1 liter. for the marinade. Pour in salt, granulated sugar, citric acid, seasonings. Bring to a boil and pour the contents of the jars with the resulting marinade. Roll up, turn upside down, wrapped in a warm towel. Allow to cool to room temperature and store in a dark, cool place.
