Marinated zucchini in tomato sauce

A very simple and rather spicy zucchini snack in tomato sauce will allow you to enjoy the taste and juiciness of vegetables in winter. In this recipe, you can use both young and large zucchini with a dense skin, it will turn out equally tasty.

Wash and dry the zucchini. It is not necessary to peel young zucchini. For larger, denser fruits, cut off the peel and core with seeds. Cut the zucchini into small wedges or cubes no more than 1.5 centimeters thick. Divide the head of garlic into cloves, peel them and pass through a press.

Pour the tomato sauce into a saucepan and put it on the fire. When the tomato mass begins to boil, add sugar, vinegar, sunflower oil, salt, chopped garlic and peppercorns. Stir all the ingredients and continue cooking until the sugar is completely dissolved.

Transfer the zucchini to the tomato sauce, stir and cook for 30 minutes over medium heat. The zucchini will gradually begin to boil down and shrink.

Spread the zucchini blank on dry sterilized jars, the sauce should reach the edges of the jar. Roll up the cans with a sealer and turn them upside down to see if there are any air bubbles coming from the lids. Wrap the seams in a warm blanket and leave to cool completely.
