Pickled chanterelles with garlic

Pickled chanterelles are in great demand at any time of the year. The mushrooms are aromatic and crispy. They can be used as a stand-alone snack or added to other cold dishes.

We sort the chanterelles, rinse them thoroughly and discard them in a colander. If the mushrooms are large, then cut them in half.

Fill the chanterelles with water, fill them with salt and put them on the stove. Bring to a boil and cook for 20 minutes.

After 20 minutes, add dill umbrellas, sugar and butter to the mushrooms. Mix and cook for another 5 minutes. Then pour in the vinegar essence and remove from heat.

Put the spices on the bottom of the scalded jars: bay leaves, cloves, black peppercorns and mustard seeds.
