Bulgarian pickled cucumbers

This is exactly the taste of pickled cucumbers, familiar to you from childhood, if it took place in the USSR. Cucumbers are sweet and sour, crispy. Salt with sugar, bay leaf and vinegar are added to the marinade.

Prepare the required amount of food based on whether you will cook a regular or double serving of cucumbers.

Wash the cucumbers, cover with cold water for 2-3 hours, so that the water covers the fruits.

Wash cans with soda, sterilize by steam, in an oven or multicooker. Boil the lids for about 5 minutes, dry.

Trim the tips of the cucumbers. Wash greens. Peel the onion and cut into rings.

Put bay leaves in the jars on the bottom (leave 6 pieces for the marinade). Put peppercorns and parsley there. Put cucumbers vertically in jars in the first layer close to each other. Put onion rings on this layer of cucumbers. Fill the jar with cucumbers in an upright position to the end.

For the marinade, pour water into a saucepan, add salt, sugar, 6 pcs. bay leaf. Bring the marinade to a boil and cook for another 3 minutes.

Pour vinegar into boiling water, wait until it boils again, and then remove from the stove. Catch the bay leaf from the marinade and pour the liquid into the jars to the cucumbers. Cover the jars with lids.

Place a napkin on the bottom of a large saucepan and pour in hot water. Place the jar in a saucepan, remove the lid and add brine to the edges of the jar. Bring water in a saucepan to a boil. Cover the jar with a lid. Sterilize a 3 liter jar for half an hour.

Next, pull the jar out of the water with tongs. Do not remove the lid from the can from the beginning of sterilization until the moment of rolling. Roll up the workpiece.

Turn the jar upside down on a towel and cover it with another towel. Leave in this form for 1 hour, then remove the towel. Allow the workpiece to cool.

The next day, the cans can be turned over and left like this for 5 days. Then they can be removed to the closet or cellar.
