Instant pickled mushrooms

You can pickle honey mushrooms quickly and in a few hours. You can serve small mushrooms pickled according to the proposed recipe after 4 hours, and larger ones will be pickled after 7-8 hours. In this way, frozen mushrooms can also be pickled.

Sort the mushrooms thoroughly, removing small debris and twigs. Then rinse the mushrooms well and transfer to a cooking pot.

Pour a glass of water over the mushrooms and place them over medium heat. Boil honey mushrooms for 30 minutes, removing all foam from the surface.

Throw the boiled mushrooms in a colander and rinse again with running water. Then transfer them to the same saucepan and pour a liter of water over them. Add the spices specified in the recipe, chopped chives to the mushrooms, add sugar and salt. Re-cook the mushrooms for another 15 minutes. Add vinegar to the end of the boil.

Transfer the mushrooms with the marinade to jars or other dishes (trays or bowls). Close the jars with lids and leave the mushrooms at home temperature for 4-8 hours (the time depends on the size of the mushrooms) for pickling. Then move them to the refrigerator, where they can be stored for up to 3 days.
