With the onset of the mushroom season, we want to offer you a simple recipe for pickled honey agarics. Delicious and crispy, they do not require sterilization during cooking, which means that it takes a little time to prepare them. Honey mushrooms marinated in the mushroom season will perfectly diversify the autumn menu and will be perfect, by the way, for the New Year holidays.

We clean honey mushrooms from litter and gently rinse them under a stream of cool running water. If there are large mushrooms, you can cut them into several pieces.

Pour water into a deep enamel bowl or saucepan, add vinegar, salt, mix and lay out the prepared mushrooms. We put them on medium heat. Bring the water to a boil, then remove the resulting foam, reduce the heat and continue to cook the mushrooms. At first, the water in the mushrooms will seem a little, but during the cooking process they will let the juice out.

Add bay leaves, cloves and peppers, a pinch of cinnamon to the mushrooms, mix and cook for 20-30 minutes. Do not forget to stir the mushrooms for even heating.

Remove the finished mushrooms from heat and leave at room temperature to cool slightly.

Put the cooled mushrooms in sterilized jars, fill them with the marinade in which they were cooked. Add pre-calcined vegetable oil to each jar, so that the mushrooms are better stored and close the jars with nylon lids.
