Pickled honey mushrooms with garlic

I want to share with you a recipe for fragrant pickled mushrooms with garlic. A winter snack among friends and relatives is sold out with a bang. Pickled honey mushrooms turn out to be delicious and crispy, and also go well with potato dishes.

Sort the mushrooms well and rinse thoroughly under cold running water.

Put the washed mushrooms in a deep saucepan, and completely cover with cold water. Leave it on for about 1.5-2 hours. Then drain the water using a sieve or colander, and rinse the mushrooms again under running water.

Put the prepared mushrooms in a saucepan with a thick bottom. Fill with cold water so that the water completely covers the honey agarics. Add some table salt to the saucepan. Place over medium heat and bring to a boil. Reduce heat and simmer for about 1-1.5 hours, periodically skimming off the resulting foam.

Then drain the boiled mushrooms through a colander or sieve. Leave for a while in such a position to allow excess moisture in the glass.

Prepare the marinade. Put bay leaf, black peppercorns, cloves in a saucepan, add the required amount of granulated sugar and table salt, pour in water and vinegar essence. Place over medium heat and bring to a boil.

Put the cooked mushrooms in a saucepan with boiling marinade, mix thoroughly and cook for about 15-20 minutes over moderate heat.

Peel the garlic and rinse under cold water, dry and cut into small cubes using a sharp knife. Add to the pan with honey agarics about 5 minutes before the end of cooking. Thoroughly wash the baking soda cans and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes.

Spread hot mushrooms evenly over sterile jars, and cover with sterile lids.
