I really love forest walks and spend them profitably. My favorite mushrooms are honey mushrooms, in order to collect a large amount of these mushrooms, you do not need to make great efforts. Honey mushrooms grow in large groups. Today I want to offer a recipe for pickled honey mushrooms.

Sort the mushrooms carefully. Put the prepared mushrooms in a deep container, and fill them with cold running water. Leave the mushrooms for about 30-40 minutes. Then drain the water and rinse the mushrooms well in cold water.

Put the washed mushrooms in a deep saucepan with a thick bottom. Fill with cold water so that the water completely covers the honey agarics. Add some table salt to the saucepan. Place over medium heat and bring to a boil.

Then reduce the heat and cook honey mushrooms for about 30-40 minutes, periodically removing the resulting foam. Drain the boiled mushrooms through a colander or sieve, then rinse with cold water and leave the excess liquid to drain for a few minutes.

Prepare the marinade. Pour the required amount of drinking water into a saucepan with a thick bottom, add salt, granulated sugar, bay leaf, allspice, black peppercorns, dill seeds and cloves.

Put on fire and bring to a boil. Boil the marinade for another 5-7 minutes, then pour in the vinegar essence and stir.

Put the boiled and washed mushrooms in a boiling marinade. Bring to a boil again and cook for another 10-15 minutes.

Peel the garlic and rinse in cold running water. Cut the peeled garlic lengthwise. Prepare the jars, wash them thoroughly with baking soda, and sterilize them in the oven, microwave, or water bath. Pour boiling water over the lids or simmer in a saucepan for about 10 minutes. Place peeled garlic on the bottom of sterile jars.

Spread honey mushrooms evenly over sterile jars. Pour the jars with honey mushrooms with hot marinade. Roll up hot jars with sterile lids using a seaming wrench. Turn the jars with mushrooms upside down, wrap them in a warm blanket and leave in this position until they cool completely for about a day.

After cooling completely, turn the jars of pickled mushrooms over and transfer them to a cool, dark place for storage.
