Pickled rows in jars for the winter

I want to share the ideal, in my opinion, recipe for pickled rows for the winter. The mushrooms are balanced in taste and aroma. I cook this appetizer for a long time and in large quantities. Rows fly away in a moment, I try to treat all my friends and relatives with these wonderful mushrooms, and also not to forget about myself.

Ingredients

Cooking process

step 1 out of 11
First of all, collect the mushrooms. This process is absolutely not laborious, because the mushrooms grow in rows, hence the name. In one place, you can collect a large number of mushrooms with little or no effort.
step 2 out of 11
Sort out thoroughly and clean well of debris and skin.
step 3 out of 11
Rinse the prepared rows thoroughly in cold running water. Cut large mushrooms into several pieces.
step 4 out of 11
Put the washed rows in a deep saucepan.
step 5 out of 11
Then fill it with cold water. Place on moderate heat and bring to a boil, then reduce heat and cook mushrooms for 30 minutes, stirring occasionally and skimming if necessary.
step 6 out of 11
Drain the cooked rows through a sieve or colander.
step 7 out of 11
Rinse the rows thoroughly under cool running water several times. They will significantly decrease in volume after cooking.
step 8 out of 11
Transfer the mushrooms to a smaller saucepan, add salt, bay leaves, cloves and black peppercorns. These spices will be enough to enrich the taste of the ryadovka.
step 9 out of 11
Pour the required amount of drinking water into a saucepan and place over moderate heat. Bring to a boil, boil for 10-15 minutes, then pour in vinegar and mix thoroughly. Boil for another 5 minutes. Wash and sterilize the jars in a convenient way. Pour boiling water over the lids or boil.
step 10 out of 11
Gently arrange the hot rows in sterile jars, and then fill with hot, fragrant marinade.
step 11 out of 11
Roll up hot jars with mushrooms with sterile lids using a seaming machine. Turn jars with rows upside down, wrap them in a warm blanket or a terry towel and leave to cool completely in this state for about a day. Then move them to a cool, dark place for long-term storage.

Bon Appetit!
