Honey cake without soda

Although there is no soda in this recipe, the honey cake still turns out to be lush and tasty. At the same time, it is quite easy to prepare, especially for novice cooks.

Break eggs into a heat-resistant bowl, add granulated sugar and honey. We put the bowl in a water bath and begin to stir with a whisk or spoon. When the mixture becomes homogeneous, add the butter and stir until it melts and interferes with the composition of the mass. Pour baking powder on top, mix and keep in a water bath for five minutes. Remove from the water bath, add flour and knead the dough. It should be soft - it is better to add flour in portions, so as not to overdo it with the amount.

Divide the finished dough into ten to twelve pieces and put them in the refrigerator for ten to fifteen minutes. Then we take out the dough and roll it out into round layers with a rolling pin. Using a plate of the required diameter, cut off each layer in an even circle, prick with a fork and put an oven preheated to 180 degrees on the middle level. We bake each cake for three to four minutes until golden brown. We collect and bake the trimmings separately - they will be used for crumbs. Let the baked cakes cool completely.

In a separate bowl, mix well-chilled fatty sour cream with sugar. Beat the cream with a mixer until the sugar crystals are completely dissolved and the mass thickens slightly.

We generously coat the finished chilled cakes with sour cream. We also grease the surface and sides of the cake with cream. Place the baked dough scraps in a blender bowl and grind until crumbled. Sprinkle the cake on all sides with the resulting crumb. We send the cake to the refrigerator for five to six hours so that it is completely saturated and becomes tender and soft.
